This is an easy vegetarian meal for anyone short on time and wanting something healthy for dinner. Broiled Lemon and Dill Salmon w/Red Cabbage was my Sunday dinner. I’ve decided to add a meal instead of just a recipe. Kinda takes the guessing out of “what’s for dinner”.
You get the main course and a side dish! The sauce made from the broiled salmon is excellent for dipping fresh garlic bread. I also made a side a Jasmine rice that was cooked with my Instant Pot, which I absolutely LOVE!
The salmon must be fresh. I personally do not care for anything frozen, not veggies, meats or even fruits. You can buy fresh from the fish market or get it from your local grocery store, it doesn’t matter but if it’s fresh you know it’s going to be clean tasting and GOOD!
If you are not ready to cook it the day you bring it home DO NOT FREEZE IT, just put the package in a bowl and pack it with ice, then stick it in the fridge until you are ready for it. This will be the last thing to cook and it will be quick.
I would start with the Jasmine rice first, it takes about 10 minutes in the Instant Pot. I chose Organic Jasmine Rice because it is fragrant and doesn’t need much of anything added to it (salt or butter).
This is the easiest thing to make. Just add the rice to the Instant Pot (one part rice to 1.5 parts water) and add water. Put the top on, turn the dial to “Seal” and push the “Rice” setting. That’s it! It will set to 10 minutes automatically. Once done just release the steam.
While the rice is going chop up your cabbage for the Chinese Red Cabbage side dish. Red cabbage usually costs a little more than green cabbage, both are excellent sources of protein. Red cabbage, however, has about 30% more antioxidants than it’s green cousin. It also works better for this side dish.
For the Chinese Red Cabbage Recipe you will need the following:
1 Red cabbage, shredded
3 chilies, chopped
1 LG piece of ginger root, peeled and finely chopped *hint you can use a teaspoon and easily scrape the skin of the ginger
4 Star Anise
4 Garlic cloves, finely chopped
5 TBS of Rice Wine Vinegar (according to your tastes)
2 TBS Soy Sauce
2 TBS Sugar
4 Spring onions, finely sliced
A handful of toasted sesame seeds and 1 TBS of sesame oil
Place all ingredients EXCEPT the onions in the wok or a large pot with a lid and let simmer over medium heat for about 25-30 minutes until the liquid evaporates and turns sticky. Stir regularly until the cabbage is covered in the glaze from the evaporated liquid.
Once the cabbage is done you can stir in half of the onions, toasted sesame seeds, and stir. You will dress it by drizzling it with the sesame seed oil and the rest of the toasted sesame seeds. Now for the Salmon.
For the Broiled Lemon and Dill Salmon Recipe you will need the following:
6-8 Pieces of fresh salmon fillets
1 LG Lemon, squeezed
Fresh chopped dill, you will need enough for the sauce and to sprinkle on top of the fillets before broiling
3 TBS Butter, melted
1 TBS Coconut oil
2 TBS Worschire sauce
Salt and pepper to taste
Set your broiler on high. In a small bowl add the coconut oil and some sprigs of dill and place in the microwave for about 30 sec or less. This infuses the oil with the flavor of the dill.
Add to a pot along with the butter, Worshire sauce, a couple of fresh sprigs of dill, and a squeeze of half the lemon. Stir until the butter is melted.
On a foiled cookie sheet or broiler pan place your seasoned fillets (salt and peppered) and generously brush each piece with the sauce. Place the fillets about six inches under the broiler and broil for about 5 minutes (depending on the thickness of the fillets) then baste them again with the rest of the sauce.
Leave for another 5 minutes then test it with a fork to check it’s flakiness. Once you have the desired flakiness you are done! By this time your rice is complete and you are ready to eat!
