I found a healthy Salmon recipe that is really easy to make. This is a perfect fresh fish recipe for those who want a healthy, and tasty meal that’s of restaurant quality. Baked Wild Caught Salmon with a Lemon Butter Drizzle is a healthy easy recipe that I hope you will love.

Fresh fish contains about 160 calories and has negligible fat, and soluble fiber helps in keeping blood sugars normal which aids in the prevention of type 2 diabetes. Fresh fish contains folate vital in helping build cells, manganese and vitamin A.

Why eat out when you can cook it a lot cheaper and make it to your specific tastes? In a restaurant, I have paid close to $26 for this dish and they took FOREVER to bring it to my table. While sitting there patiently (well not really patiently) waiting for my meal I thought to myself, Why am I paying for this when I can make it at home?

Baked Wild Caught SalmonSalmon Fillet

  • 2 to 3 lb salmon fillet
  • salt and black pepper to taste
  • 1 Tbsp olive oil for drizzling salmon
  • 1 Tbsp parsley finely chopped for garnish

Line baking sheet with foil or parchment. Arrange salmon skin-side-down, season and drizzle the tops with oil. Bake uncovered at 425 for 10-15 min or until salmon is cooked through to your liking.

Lemon Butter DrizzleEasy Vegetarian Meals

  • 1 small onion or 2 medium shallots super finely diced (about 1/4 cup diced)
  • 1/4 cup fresh lemon juice from 2 medium or 1 large lemons
  • 1/4 cup dry white wine
  • 1/2 cup heavy cream
  • 1/2 cup 8 Tbsp cold unsalted butter cut into 8 pieces

In a small saucepan, combine finely diced onion, lemon juice, wine and simmer over medium heat until reduced to a thick mixture (7-8 min).

Whisk in the heavy cream once it begins to simmer, reduce to low heat and slowly whisk in the butter, one tablespoon at a time (whisking constantly). Add salt to taste and remove from heat. Cover with a lid to keep warm.

Place your Salmon on the plate and drizzle generously with the lemon butter. Garnish with fresh parsley.

Make it Complete

Add fresh organic steamed vegetables like broccoli and cauliflower – In a bowl combine melted butter or olive oil (I use coconut oil), salt, pepper, and garlic powder then toss in your vegetables. With a good steamer, this will only take about 10 minutes. I use a Simply Ming Non-Stick Wok which came with a steamer basket; I am in love with this Wok! 

Add organic asparagus to your meal – You can bake them!

  1. Preheat oven to 425
  2. Place the organic asparagus into a mixing bowl, and drizzle with the olive oil. Toss to coat the spears, then sprinkle with Parmesan cheese, garlic, salt, and pepper
  3. Bake until just tender, 12 to 15 minutes depending on the thickness

Complete this delicious dish with organic wild or brown rice.

There are several healthy choices of open water seafood but I tend to gravitate towards these few:

  • Albacore Tuna
  • Swordfish
  • Wild Caught Salmon
  • Oysters
  • Crayfish
  • Crab/lobster

This is my staple “go to” fish list with a few shellfish threw in; I love all forms of seafood including most shellfish. I do not have any allergies so I eat everything!
