Healthy fish recipes are easy to create. This recipe is a perfect part of an easy vegetarian meal, simple and quick to prepare. Fish never takes long to cook and can be a “go-to” for when you are short on time but still want to feed yourself and/or your family something filling and healthy; Baked Walleye w/Herb Butter is the way to go!

The type of fish in this recipe is more of a heartier texture. It can be cooked at high temperatures quickly and not dry out. Baked Walleye Fillets and Herb Butter will take about 10 minutes to prepare and 10 minutes to cook. A solid healthy dish in about 20 minutes. Can’t beat that!

What Is A Walleye Fish?Walleye-Fish-Fillet

Walleye is a freshwater fish from the perch family, it’s also known as a yellow pike. It’s low in fat and high in protein giving you more than 30% of dietary intake for adults. Walleye is slightly higher in minerals than perch containing 18% Iron intake for men and 8% for women, and 82% B-12. Magnesium is higher in this fish than most at 38%.

A great thing about fish is its versatility. You can fry it, bake it, poach it, sear it, sushi-fy it, whatever your tastes. It’s almost impossible to mess up except to overcook it. Any fish that has been overcooked like most seafood will turn to leather and one of the dryest things you have ever eaten.

Fish only takes a few minutes to cook no matter what manner of fire you plan to put to it.

What Is Needed For This Dish

You will not need much for this recipe. I made this last night for a quick meal after the hubby and I had been running errands most of the day. It took me about 20 minutes total to prepare and cook.

This recipe requires 3 tbs. butter, 1 c scallions, 4 fillets, lemon pepper seasoning, 1c basil, 1c thyme, 1-2 slices of ginger, lemon zest and wedges, a baking dish, basting spoon, grater, paper towels, and an oven. The oven needs to pre-heat at 500 degrees. This temp will not change, we are cooking at this heat.

First, gather all of your ingredients and cookware before starting, this way everything you need will be in reach and ready to grab. First thing is to place 3 tbs. of butter, 1/2 c chopped scallions, 1/2 tsp. basil and thyme, 1-2 slices of ginger into your baking dish and place it in the oven while it’s pre-heating.

Second, take your fish and rinse it off then take your paper towels and pat them dry. Drying your fish will take some of the excess moisture out and makes the seasoning stick to it. After you have dried your fish season both sides with lemon pepper, thyme, basil, salt, and fresh cracked pepper. DO NOT FORGET ABOUT YOUR BAKING DISH IN THE OVEN. Do not let your butter burn.

Take your baking dish out of the oven and place the fish skin side down and baste your Walleye with the butter mixture then add the rest of your herbs, lemon zest, and scallions to the top of your fish. Put the dish back in the oven for 5-7 minutes, 10 minutes tops (depending on thickness) or until the fish is flakey when checked with a fork.

Addon Suggestions – Sides

Walleye goes good with just about any side you want. Last night I made this with a side of white rice that I boiled in broth instead of water and added fresh cilantro, salt & pepper. I also prepared a quick spring mix salad.

I used the organic spring mix and added radishes, sliced carrots, fresh flat-leaf parsley, bell pepper, tomato, fresh basil, shredded cheese, and a chopped boiled egg.

All of these ingredients are organic. I no longer trust the other brands, it may cost a bit more but none of the organic vegetables have been recalled *hint, hint.  Freshwater fish is also healthier. They are not farmed or mass produced therefore not exposed to antibiotics or overcrowding.

Just like organic foods, freshwater fish and seafood are a bit more costly but the nutritional value makes it worth it in my opinion.

  • 4 fillets
  • 1/2 tsp. lemon pepper seasoning
  • 1c scallions, chopped
  • 1tsp basil
  • 1 tsp. thyme
  • Lemon zest

  1. Preheat oven to 500 degrees
  2. Place butter in the baking dish, add half of your herbs, scallions and ginger slice/s. Put the dish in the oven while it’s preheating and begin preparing your Walleye fillets. (KEEP your eye on it, do not let the butter burn)
  3. Rinse the Walleye and pat dry with a paper towel then season both sides
  4. Take the baking dish out of the oven and place your fish skin side down, place back in the oven and baste with the butter
  5. Cook for 5-7 minutes, no more than 10 minutes or until the fillets are flaky when tested with a fork
